Ingredients
8ripe peachessliced
24ozunsweetened coconut milkany variety
1tbspvanilla pasteor seeds from one vanilla bean
2/3cupmaple syrupagave would work great, too
Instructions
Add all of the ingredients into the bowl of your food processor, or a high-powered blender, and blend until really smooth.
If you want your nice cream to have a creamier consistency, pour your mixture through a fine sieve into a large bowl. This step is completely optional, but, since we did not peel the peaches, it will allow for a smoother nice cream.
Set up your ice cream machine according to it's manufacturer's instructions and pour your peach mixture in. I let mine run for a good 20 minutes before transferring it into a freezer safe container.
Freeze for at least 6 hours before serving.
Notes
🧡Pro Tip: Unless you used the full-fat canned coconut milk, your nice cream will be pretty hard. Take it out of the freezer 10-15 minutes before you're ready to serve it for that perfect, scoop-able consistency.Â
