Gluten Free Cinnamon Apple Crisp
The perfect ready-for-cooler-weather Cinnamon Apple Crisp that will warm your soul from the end of summer into the fall.
This past weekend, we were joined by our friends for a long Labor Day weekend at a charming little cottage close to Round Top, Texas. Round Top is know for it’s vintage finds and all things home decor, great scenic views and lots and lots of farm animals, which I love!
I know I may sound bias, but our friends are the sweetest, funnest and most amazing folks ever! I have never been part of such an amazing and supportive group, and it is something that I will cherish and forever be grateful for.
Among all the wonderful things we did this weekend, my favorite was cooking together and staying up late with my girlfriends, sipping on wine and bonding over girl talk. This is how this recipe came to life!
My friend Kristina had the brilliant idea of making some kind of an apple-cinnamon-crumb-crisp concoction that would become the perfect vessel for vanilla ice cream and caramel. This is when I realized that she is 100% meant to be my friend. 😂
She and my friend Amey have always been super supportive and are constantly showering me with new ideas for recipes and continue to inspire me! Thank you both!!!
As Kristina and I were searching through pinterest to find a yummy autumnal apple dessert to bake together, we came across an “Old-fashioned Apple Crisp”. Immediately we sent the men out to hunt our ingredient list down and got to work!
We had the best teamwork moment in the kitchen as we got our very efficient assembly line together; Allison was peeling the apples, Kristina and Nick where chopping away, creating the most perfect and uniformed apple slices my eyes ever did see, and I worked on the “crumble”.
In a blink of an eye, we had our apples sliced and seasoned, set in the bottom of the baking dish and the crumble poured evenly on top. In she popped and after dinner we all devoured an entire 13″ x 9″ baking dish along with a tub of vanilla Blue Bell ice cream and about half a jar of caramel. #NOREGRETS
Well, long story already not so short, it was a hit, and I was determined to recreate it and make it a tad bit healthier and gluten free. I swapped out the flour for almond flour, used coconut sugar instead of refined sugar and added nuts, you know, for healthy fats and good fiber 😉.
