- 3 golden delicious apples, or other variety sliced, 5 if they are small
- 1 tsp cinnamon divided
- 1 tsp lemon juice
- 1/2 cup plus 2 tbsp, coconut sugar divided
- 1/2 cup almond flour
- 1/2 cup gluten free old fashioned oats
- 1/4 cup unsalted butter cold, cubed
- 1/3 cup walnuts or pecans chopped
- pinch pink Himalayan salt
Preheat oven to 350° F / Butter or grease an 8x8 baking dish, or any medium-sized oven safe dish.
In a large bowl, add sliced apples, 1/2 tsp of the cinnamon, lemon juice and 2 tbsp of coconut sugar and mix to combine; transfer to prepared baking dish.
In a medium bowl, combine remaining coconut sugar, cinnamon, almond flour, oats, salt and cold cubed butter. Use a pastry cutter or two forks to cut the butter into smaller pieces until you have pretty uniformed pea-sized crumb mixture. Mix in walnuts or pecans.
Evenly cover the apple mixture with the crumb topping and bake for about 40-50 min, or until the apples are soft and the mixture is bubbling.
Serve warm on its own, or with vanilla ice cream and caramel drizzle.
