Brownies. That is all I can say. This is practically what dreams are made of…guilt free, chocolaty, sweet and ooey-gooooey!

Here’s two words that you never thought you would ever hear in the same sentence: healthy & brownies. Am I right?

These rich and gooey brownies will have you wondering where they have been all your life!

It all starts with one of the most beloved superfoods, avocado! Now I know you may be wondering if I have officially lost it; like, how could you mix an avocado in there? Well, it works, my friends!

The avocado is thrown in the food processor with the other wet ingredients, and processed until it becomes a silky, creamy batter. And no, you don’t taste it at all!

This would be great if you have little ones at home as it is a sure way to sneak some healthy fats in their diet. Imagine the smile on your kid’s face when you serve them up a second piece without them even having to ask! They will be mind-blown! 🤯

The simplicity of this recipe is my second favorite thing about this recipe (chocolate being the first, duh!).

All of the other ingredients are simple pantry staples and you probably have an avocado on the counter, sitting there, all by itself…

Hey, keto peeps: just swap out the coconut sugar for 1/2 a cup of xylitol!

I made mine in an 8 x 8 pan, which gave me thicker brownies, but you can also use a 9 x 9 pan, just make sure to watch them around the 15-17 min mark as they will bake quicker!

Ingredients

  • 1 large avocado
  • 2 large eggs
  • 3 tbsp refined coconut oil use unrefined for coconut flavor
  • 1 tsp vanilla
  • 1/2 cup coconut sugar use xylitol for keto version
  • 1/2 cup blanched almond flour coconut flour works too!
  • 1/2 cup unsweetened cocoa powder
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp sea salt
  • 1/2 cup dark chocolate chucks or chips plus extra for sprinkling on top

Instructions

  • Preheat your oven to 350° F and line your pan with parchment paper; I like to cut mine longways to fit the bottom and leave an overhang on the sides, which allows me to pull up and easily remove them once cooled.
  • Scoop out your avocado and toss it in a food processor along with the eggs, coconut oil, coconut sugar & vanilla. Process until it is completely creamed together and silky.
  • Add the almond flour, cocoa powder, baking powder, baking soda and sea salt and process until completely combined.
  • Remove your bowl from the processor and stir in your chocolate chunks (or chips) with a spatula.
  • Pour your batter into your prepared pan and make sure to smooth it out evenly. Sprinkle a few more chocolate chunks (or chips) on top.
  • Bake for 20 min or until the top is set and bounces back when lightly touched with your finger. Let cool completely before removing from pan and slicing.

Notes

🧡 Pro tip: If you want your brownies to have a light coconut taste, use unrefined coconut oil and also stir in 1/4 cup of unsweetened coconut flakes with your chocolate chunks!
