Gluten Free Strawberry-Blueberry Muffins

These are my Red, White & Blue Muffins for when you’re feeling a little patriotic, perfect for Fourth of July or simply when you want some strawberry-blueberry goodness in your life.

We are staying up in Round Top, Texas for the long holiday weekend at an amazing ranch that belongs to our sweet friends. They are letting us escape the daily chaos in one of their beautiful farmhouse-styled cottages on their property. It’s the breathtaking Cottages at Turkey Creek.

I have never felt so relaxed. I am so grateful to have the opportunity to just hang out with my husband, on a gorgeous piece of land, with the company of a happy bunch of friendly cows and two beautiful horses; whom, might I add, are OBSESSED with carrots.

Sometimes, all you need is a little impromptu getaway to the middle of nowhere, to re-ignite your creativity and be inspired in so many ways. I am SO loving the country life.

For me, being able to have a change of scenery and play in a new kitchen is all it takes to make me a happy girl.

Although it is Fourth of July weekend, the town is pretty quiet with everything going on with the Pandemic right now. There are a few vendors showcasing in town though, and still lots of fabulous shopping to be done.

Round Top is known for their incredible Antique finds and “Joanna Gaines'” inspires furniture & home decor. There are so many funky little boutiques with one-of-a-kind finds from fashion, gifts, leather goods, home decor & furniture. Did I also mention the plethora of amazing little cafes, restaurants and bars?

I, for one, am a sucker for finding unique little treasures and apparently have a new found addiction to all things farmhouse style, and of course, look forward to bringing home some great finds.

While we’re here, staying in this stunning cottage, I got the biggest desire to bring you some new, easy recipes that can be whipped up quickly, so you can spend more time enjoying these long summer days, rather than slaving away by the hot oven.

With the temperatures reaching 100 this weekend, I know I definitely appreciate a quick muffin recipe for mornings that you just want to be lazy and lounge in your pajamas all day, am I right??

I love this recipe as all you really need is a bowl, a wooden spoon, pantry-staple ingredients and some fresh, juicy summer berries.

As you can see in the pictures, I did not have any vanilla extract on hand, but I did have a handy little packet of Vanillin.

It’s an Italian vanilla flavored powder that gives baked goods a sweet and subtle vanilla flavor, reminiscent of waffle cones. However, If I had vanilla extract on hand, it would have been my first choice.

You can either get 12 smaller-sized muffins if you use a regular cupcake pan, or, you can use a traditional muffin pan and get 6 larger muffins, as I did here.

Gluten Free Strawberry-Blueberry Muffins

A quick an easy gluten free muffin recipe for those lazy weekend mornings.

Ingredients

  • 8 tbsp butter (1 stick) Melted & cooled to room temp
  • 2 large eggs
  • 1 tbsp lemon juice
  • 1/2 cup milk I used whole milk, but low fat will work
  • 1 1/2 tsp vanilla extract
  • 2 cups gluten free flour Bob's Red Mill 1 to 1 Gluten Free Baking Flour
  • 3/4 cups sugar
  • 2 tsp baking powder
  • 1 tsp salt
  • zest from one lemon
  • 2 1/2 cups fresh mixed berries I used strawberries & blueberries

Instructions

  • Preheat your oven to 375° F / Line your muffin tin with paper liners or grease with coconut oil.
  • Mix 1 tablespoon of your flour in a medium bowl along with your berries and mix well to coat them with the flour; this will prevent the berries from staining your batter and will give you a cleaner contrast. This is, however, completely optional.
  • In a medium bowl, add melted butter, milk, eggs, vanilla extract & lemon juice and whisk well.
  • In a large bowl, combine flour, sugar, baking powder, salt and lemon zest, and mix together until combined.
  • Add your wet mixture to your dry ingredients and mix together with a spatula or wooden spoon just until its all incorporated. Fold in the berries.
  • Evenly divide the batter into your prepared lined/greased muffin tins and bake for 40-45 minutes or until the top is set and has developed a beautiful golden color. If you are using a 12 cup baking pan, check your muffins at the 20 minute mark as they will cook a lot faster.

Notes

🧡 Pro Tip:  Once you add the lemon juice to the wet mixture, it will appear curdled; don’t worry though, as this is creating a sort of buttermilk and will ensure that your muffins and light and moist at the end.
