- 2 cups almond flour
- 1/4 tsp baking soda
- 1/2 tsp pink Himalayan salt
- 1/2 tsp gluten free vanilla extract or paste
- 1/4 cup unrefined coconut oil melted
- 1/4 cup maple syrup
- 1/3 cup unsweetened shredded coconut flakes
- 1 cup dairy-free dark chocolate chips
Pre-heat your oven to 350° F / Line a couple of large baking sheets with parchment paper or silpat.
To a large bowl, add your almond flour, baking soda, salt, vanilla, coconut oil and maple syrup and mix until you get a crumbly, but wet, dough.
Add in your coconut flakes and chocolate chips and mix to combine.
Using a tablespoon or cookie scoop, scoop out tablespoon sized balls on the cookie sheet, using your fingers to shape them together and slightly pressing down to flatten them.
Bake for 10 minutes in pre-heated oven, or until the edges are nice and golden. Keep an eye on them as they can burn rather quickly, especially the coconut.
