Healthy Gluten Free Coconut & Chocolate Chip Cookies

Ingredients

  • 2 cups almond flour
  • 1/4 tsp baking soda
  • 1/2 tsp pink Himalayan salt
  • 1/2 tsp gluten free vanilla extract or paste
  • 1/4 cup unrefined coconut oil melted
  • 1/4 cup maple syrup
  • 1/3 cup unsweetened shredded coconut flakes
  • 1 cup dairy-free dark chocolate chips

Instructions

  • Pre-heat your oven to 350° F / Line a couple of large baking sheets with parchment paper or silpat.
  • To a large bowl, add your almond flour, baking soda, salt, vanilla, coconut oil and maple syrup and mix until you get a crumbly, but wet, dough.
  • Add in your coconut flakes and chocolate chips and mix to combine.
  • Using a tablespoon or cookie scoop, scoop out tablespoon sized balls on the cookie sheet, using your fingers to shape them together and slightly pressing down to flatten them.
  • Bake for 10 minutes in pre-heated oven, or until the edges are nice and golden. Keep an eye on them as they can burn rather quickly, especially the coconut.
