Healthy Gluten Free Coconut & Chocolate Chip Cookies
These little low-carb cookies are so delicious that you will feel like you are being sooo naughty; but really, they’re healthy, vegan and made with feel-good ingredients!

I love using ingredients that are nutrient packed, offer big favors and that you don’t have to feel guilty about having one (on two) too many.
On my health journey, I’m always trying to incorporate as many clean, whole-food ingredients as I can. Not only are they a better option for obvious health reasons, but they just make me feel good and never weigh me down.
I used unsweetened shredded coconut in this recipe as it provides a rich coconut flavor without the added sugar. I also used unrefined coconut oil, which adds to the coconut-y factor.
If you are not a big fan of coconut, or it’s flavor, feel free to omit the coconut shreds and use refined coconut oil instead 😊.
To keep these dairy-free (and vegan) I opted for dairy-free dark chocolate chips, which are readily available at most grocery stores nowadays. I used the mini variety, but as always, this is completely your choice!

Chocolate chip cookies are just one of those recipes that you NEED to have; regardless of what life-style you follow.
If you have little kiddos, these are also great to have on hand as snack when on the go, to take to school or great for those after-school munchies.
I don’t think I have ever met a kid that said no to a chocolate chip cookies and these are ones you can feel good about giving them.
Healthy Gluten Free Coconut & Chocolate Chip Cookies
Ingredients
- 2 cups almond flour
- 1/4 tsp baking soda
- 1/2 tsp pink Himalayan salt
- 1/2 tsp gluten free vanilla extract or paste
- 1/4 cup unrefined coconut oil melted
- 1/4 cup maple syrup
- 1/3 cup unsweetened shredded coconut flakes
- 1 cup dairy-free dark chocolate chips
Instructions
- Pre-heat your oven to 350° F / Line a couple of large baking sheets with parchment paper or silpat.
- To a large bowl, add your almond flour, baking soda, salt, vanilla, coconut oil and maple syrup and mix until you get a crumbly, but wet, dough.
- Add in your coconut flakes and chocolate chips and mix to combine.
- Using a tablespoon or cookie scoop, scoop out tablespoon sized balls on the cookie sheet, using your fingers to shape them together and slightly pressing down to flatten them.
- Bake for 10 minutes in pre-heated oven, or until the edges are nice and golden. Keep an eye on them as they can burn rather quickly, especially the coconut.
