Peach Dreams Nice Cream

Gluten free, dairy free, guilt free…literally peach dreams in a bowl. The coconut milk gives it a subtle coconut flavor for some peachy summer island vibes.

Shout out to my dear friend, Amey, for giving me the idea for this Nice Cream recipe! I had mentioned to her that I had a bunch of ripe peaches I needed to use up and she magically thought of this concoction right there on the spot!

This recipe is so simple and easy, only requires 4 ingredients and it will satisfy your ice cream cravings in one flavorful bite.

I was able to to find an unsweetened vanilla flavored coconut milk at my local grocery store, but any coconut milk will do! Next time I will make it with the Califa Toasted Coconut milk, as it will give it a nice nutty flavor.

Whichever coconut milk variation you choose, just make sure that it it unsweetened, as otherwise it will turn out too sweet. Also, make sure you go for full-fat coconut milk so it doesn’t become too hard once it freezes.

If you want your nice cream to be a little naughtier, and more creamy, feel free to use full-fat canned coconut milk here too!

To give it a delicious sweetness, I opted for maple syrup, however Agave and even coconut or date syrup are also great lower-glycemic options.

While having an ice-cream machine is well worth your while here, you can also make it without one; it will just require more active time as you have to tend to it for a few hours.

If you do not have an ice cream machine, once all your ingredients are blended, simply pour the mixture into a freezer-safe air-tight container. Every 45 minutes or so, take it out of the freezer, give it a nice mix with a spatula or wooden spoon, and place it back in the freezer.

Continue to do this for the next 3-5 hours or until your mixture if thick and almost frozen.

Ingredients

  • 8 ripe peaches sliced
  • 24 oz unsweetened coconut milk any variety
  • 1 tbsp vanilla paste or seeds from one vanilla bean
  • 2/3 cup maple syrup agave would work great, too

Instructions

  • Add all of the ingredients into the bowl of your food processor, or a high-powered blender, and blend until really smooth.
  • If you want your nice cream to have a creamier consistency, pour your mixture through a fine sieve into a large bowl. This step is completely optional, but, since we did not peel the peaches, it will allow for a smoother nice cream.
  • Set up your ice cream machine according to it's manufacturer's instructions and pour your peach mixture in. I let mine run for a good 20 minutes before transferring it into a freezer safe container.
  • Freeze for at least 6 hours before serving.

Notes

🧡Pro Tip: Unless you used the full-fat canned coconut milk, your nice cream will be pretty hard.  Take it out of the freezer 10-15 minutes before you’re ready to serve it for that perfect, scoop-able consistency.
